Sous Chef  

As a Sous Chef at Alyeska Resort, you play a pivotal role in overseeing and coordinating the culinary operations of our kitchen. Your creative touch, commitment to quality, and leadership skills are essential in delivering exceptional dining experiences to our guests. You will report to the Executive Sous Chef and the Outlet Chef de Cuisine.  

Position Responsibilities  

  • Collaborate in food preparation while adhering to quality standards, portion control, flavor, and presentation, responding to incoming orders. 
  • Supervise kitchen staff in the preparation, portioning, and garnishing of dishes to ensure adherence to cooking methods, garnishing techniques, and portion sizes as specified. 
  • Train staff in job duties, sanitation, and safety procedures. 
  • Estimate food requirements and manage food and labor costs. 
  • Requisition food and kitchen supplies as necessary. 
  • Inspect, report, and correct safety hazards related to kitchen equipment. 
  • Provide detailed guidance to culinary personnel, enhancing their culinary expertise. 
  • Actively participate in meat preparation, carving, and dish preparation, including sauces, particularly during busy periods and banquets. 
  • Conduct regular inspections of refrigerators to prevent contamination and food wastage. 
  • Anticipate daily production requirements and delegate tasks accordingly. 
  • Maintain kitchen cleanliness, ensure stock availability, and oversee kitchen maintenance. 
  • Assume kitchen responsibility in the absence of the Chef. 
  • Exhibit strong organizational skills to manage daily workloads, with creativity and artistic flair as valuable assets. 
  • Other duties as assigned.  

Essential Skills and Experience 

  • High School diploma or equivalent. 
  • Five years of relevant experience and/or training; or an equivalent combination of education and experience. 2-5 years experience in a resort setting, preferred.  
  • Preferably, possess a culinary apprenticeship or formal culinary training. 
  • Proficiency in reading and interpreting documents such as menus, recipes, safety guidelines, operating manuals, and procedure instructions. 
  • Effective written and verbal communication skills to interact with customers and team members. 
  • Strong mathematical abilities to calculate figures and percentages, applying basic algebra and geometry concepts. 
  • Problem-solving capabilities to address practical issues and handle various situations with limited standardization. 
  • Competency in interpreting instructions provided in written, oral, diagram, or schedule format. 
  • Must have or obtain a ServSafe certification during the introductory period.

  • Work Environment:  While performing the duties of this job, the employee is frequently exposed to cold/heat, wet and/or humid conditions and fumes or airborne particles.  The employee is occasionally exposed to moving mechanical parts.  The noise level in the work environment is usually loud.
